The Olive Harvest - The olive harvest is done manually, or by removing olives from the branches with their hands or with the help of articular "combs".
The Crushing - The crushing is the shredding of the pulp and pits of the olives. This process is done with the help of the stone mills.
Kneading - The kneading is a delicate mixing of dough, breaking the oil-water emulsions formed during the pressing, facilitates the subsequent extraction of the oil.
Extraction - The extraction classic, which is pressure, allows the separation of the three components of the paste that was obtained during the process of crushing. These components are the oil, husk and the watery part, also called water vegetation. The extraction is done with hydraulic presses and subsequent centrifugation or decanting
